Are you planning on doing a little baking for the Belmont?  Check out Chef Horseradish’s home cooking to find the race recipe that is right for you.  This weekend’s big races are at Belmont Park in Elmont, NY.  When Horseradish thinks of New York, he thinks of Thoroughbred racing and cheesecake.  He also thinks he needs his time for handicapping and his money for wagering.  Horseradish has his spin on the classic desert that will leave you with time and money.

Cheesecake dates back to ancient Greece.  The Belmont Stakes dates back to 1867.  Just as many variations of the recipe exist as do picking the winning trifecta.  The debate over whether it is in fact a cake or a pie are nearly as heated as those between Triple Crown enthusiast versus Justify’s naysayers.  New York cheesecake commonly, but not always, has a graham cracker crust, and a dense and baked layer made of eggs and any combination of sour cream, ricotta or cream cheese.  It can take hours and skill plus pricey ingredients and plenty of heat to bake it up.  My New Jersey grandmother had an easier way I obtained from her recipes, though it is oddly similar to a brand name condensed milk company’s recipe.  Good one, Grandmom!

This recipe is not a pain in the can and you can do this too, just spread 1 can of topping over the cheesecake and it's ready to eat!

Cherry Cheesecake

Ingredients:

  • One 6 ounce graham cracker pie crust
  • One 8 ounce brick of cream cheese
  • One 14 ounce can of sweetened condensed milk
  • 1/3 cup of lemon juice
  • One teaspoon of vanilla extract
  • One 15 ounce can of cherry filling or topping

Instructions:

  • Poke holes in the pre-made crust with a fork
  • Bake the crust in a preheated oven of 365 degrees for 6 minutes
  • Cool the crust on the counter
  • In a large bowl beat 1 brick of cream cheese
  • Add into the bowl and beat in the sweetened condensed milk
  • Add into the bowl and beat in lemon juice
  • Add into the bowl and beat in vanilla extract
  • Pour the mix from the bowl into the cooled crust
  • Put the crust with the mixture into the refrigerator for up to 4 hours or until set
  • Top it off with the can of fruit filling that has also been in the refrigerator
  • Eat it, nom, nom!
